In the early 1990s, Julie’s father was diagnosed with Celiac Disease, forcing him to give up many of his favorite foods, including pasta. As more family and friends were diagnosed with Celiac Disease or gluten sensitivity, traditional family gatherings became challenging, with recipes being altered or omitted to accommodate everyone.
Determined to keep her family’s culinary traditions alive, Julie set out to create a gluten-free pasta that everyone could enjoy. After many tests and iterations, Viola Food Co. was born. Using the same time-honored techniques and only the finest ingredients, we proudly bring a taste of our family tradition to your table—gluten-free and without compromise.
Our company was born from a deep love for family and a legacy of culinary tradition. Julie, our founder, learned the art of crafting homemade pasta from her grandparents at a young age, spending countless hours in the kitchen perfecting traditional Italian dishes.
